Domaine des Baumard
Eye - Color: Bright pale gold, with slight grey tint. When removing the cork, numerous CO2 residual pearls from the fermentation appear on the glass in a “star” shape. This phenomenon will disappear with aging.
Nose - Smell: Already quite intense. Nice and straightforward. Creamy and mild flavors. A great moment of pleasure.
Palate - Taste: Dry, full-bodied and quite vinous, very round. The imposing volume is balanced by a great freshness which results from the very slight tingling of the CO2 residual (will be reduced with time).
Food Pairing: Great as an aperitif. Fish in sauce. Cooked shells and crustaceous. Sweetbreads.
Wine Spectator
Seems bone dry at first, with steely white peach, mineral and quince notes held in check by vibrant acidity. Long, bracing finish unwinds in the glass to show more depth, with hints of orange blossom, lanolin and fig. A backward wine that needs cellaring. Best from 2007 through 2017.

Screw Cap
Wines sealed with a screw cap as opposed to a cork, which experts report protects and preserves wine more effectively than does a cork, while also eliminating the possibility of cork taint.
No Sulfites
All wines naturally contain some sulfites, however wines that contain less than 10 parts per million sulfites are not required to include "Contains Sulfites" on their labels.
